Richard II’s Apple Pie | Recipe Rewind S1E9

Apple Pie ‘fit for a king’? The dish is considered a traditional American dessert, however the first cookbook in the English language, from all the way in 1390, contains an innovative ‘Tartys in Applis’ recipe originally intended to be made for King Richard II.

For the coffyn:

  • 1 1/2 cups flour
  • 4 tablespoons of butter
  • 2 egg yolks
  • 1/2 teaspoon of salt
  • Pinch of saffron
  • Just under 1/2 cup of water

For the filling:

  • 3-4 green apples (Granny Smith, preferably)
  • 3-4 pears
  • Handful of figs
  • Handful of raisins
  • Pinch of saffron
  • 1 1/2 teaspoons of powder douce
  • 1/4 teaspoon of salt

First things first, separate the two egg yolks. Add half of the butter, all of the salt, and all of the flour to the eggs in a mixing bowl. Mix until a good consistency, and put into a buttered dish.

Remember to add a pinch of saffron. Then, chop up your apples and pears. Or, alternatively, use a blender. Give the apples and pears an initial pulse, then add the figs and raisins.

Keep mixing for another minute, then add the rest of the butter and another pinch of saffron. Add a teaspoon and a half of the powder douce mix, blend for one final time and then put in the oven until the pastry is golden and you’re done!
